Shrimplancoli


Yield - 2, Prep and Cook Time - 50 Minutes

Recipe
12 medium sized shrimps- peeled and deveined.
1 tsp each, salt and freshly ground black pepper
1 tbsp extra virgin olive oil
oil for frying
1 tsp chopped flat leaf parsley. 
Preparation
Blanch broccoli in a salted boiling water for 1 minute. Shock in an ice bath.
Season shrimp with salt and pepper and cook to opaque on a medium heat. toss in garlic and blanched broccoli in same pot shrimp was removed. Deep fry or pan fry plantain to golden brown.
Sauce
Saute sliced onions, fresh tomatoes, add 3 tbsp chicken stock or water, oregano, salt and pepper and simmer to reduce to au sec.
Pour suace in a serving dish, layer platain, broccoli and shrimp.

Fire Roasted Corn/Plantain/Fish Medley


Yield- 1 serving. Prep and cook time - 1hr 30 minutes

Recipe

I - Medium fresh corn.
1 - Medium green plantain (unripe)
1 - fillet of tilapia
freshly ground Black pepper.
salt to taste
1 tbsp extra virgin olive oil
1 tbsp butter.
Preparation
Marinade fish with salt and pepper and some squeeze of lemon juice for 20 minutes.
Peel and cut plantain in half. Score plantain so that butter penetrates plantain. It will cook faster too. 
Dab plantain and corn with melted butter. Wrap plantain with foil and bake in oven for 45-55 minutes. When tender, unwrap and charr over open flame fire on low heat for 1 minute on each side. Roast corn over low flame till all sides are charred, not burnt. Same with fish. Assemble all on a plate and drizzle with simple vinaigrette (mixture of olive oil, remaining lemon juice, salt and pepper). Serve hot or warm! Delicious...

No-Palm Oil Vegetable Soup & Pounded Yam


Yield- 2 , Prep and Cook Time 1 hr.

Recipe
1 lb frozen spinach-thawed.
1 cup medium chopped cooked beef tripe.
2 tbsp minced onion
1 tsp minced habanero pepper.
1 tbsp ground dry crayfish
1/2 cup flaked smoked white fish or desired dried fish.
1 knorr cube.
1 tbsp canola oil
Salt to taste

Preparation
Cook beef tripe for 20 minutes, add smoked fish, salt, pepper, crayfish and cube. Simmer for another 20 minutes till stock is almost dried up. Add oil squeezed spinach, stir, cover to simmer for 3-5 minutes
Serve over Rice or desired foo-foo or savor as is. Sooooooo Fresh!.
