Otana ni Mini nri-Ugu (An Homage to Manma of Omuokpiriku- Elele Town, Rivers State of Nigeria)

 
 
I remember very well, Oh, on a market day, women, men and children would have harvested, fermented and washed some cassava and or fried garri to to sell in the market in order to generate some income. As early as 4-5am, there's a rush moment of preparation and traffic...all road leading to this great market. Manma, our land lord's daughter who was hearing challenged will prepare so immensely and come back with ingredients for this soup and other few more days of FOOD TREATS. Once she makes it back early, you know it's a great bargain day as same goes otherwise. She takes off her clothes and heads to the kitchen to whip up this meal. With sign language; she will invite anyone around to dine with her. Once she offered me and I tasted this vegetable soup with dry fish, goat meat and very fresh pumpkin leaf soup with a little melange to thicken? I got hooked. It had been in my repertoir since then!

Jazmine Rice & Peas with Palm Oil Pepper Sauce

 
Am on a mission to conquer my husband's phobia for unfamiliar foods. He won't try any food he is not familiar with; if it is long grain parboiled rice, he won't try it. He does not like any fish with fishy smell. Got games...yea! how about thyme-lime scented peppered sauce made with croaker fish, a little different from his every day stew and goat meat or hen-type of meal. So, a little bit of what he knows and most he doesn't know like or know...? Jasmine rice baby!!!!!!!seconds were asked for. So Nigerian...with some secret ingredients especially my seafood season!ng that can be purchased from my website. Dinner tonight? Get into your kitchen and start cooking.

Fish Taco with an Attitude!


I could not stand the smell of goatmeat in my house no more, sick of rice and pando as my husband is hooked on these foods. Much as I don't eat them much with him; preparing same ole same ole was just tiring. So, I decided we are all going Mexican tonight and no compromise! I stopped by the grocery and picked 2 lbs of tilapia, lemon and lime, onions, wheat tortilla, vine tomatoes, cilantro, guacamole andof course scotch bonnet pepper. I marinaded the fish with lemon, minced scotch bonnet, garlic and olive oil for 30 minutes. Dredged fish lightly in a seasoned flour and pan fried them in olive oil till golden brown. I then chopped up my veggies -cilantro, onions, tomatoes and jalepeno ( pico de gallo) and seasoned it with lime juice, salt and pepper and set aside. I wiped the pan and heated another olive oil;flash fried the tortilla to crispiness. Bam! guacamole was mashed to become the base,layered with fish and pic de gallo. Final touch is juice of lime...Here you go! My husband and son travelled to Mexico w/o leaving our home. Healthy Make it Happen....Enjoy!
